This is a recipe that my mom made for me and my sister and brother when we were little and I decided to make it for my children when they were little and they love it to this day even though they are grown adults with their own children. They are the ones that named it flattened and fried chicken.
Thin chicken cutlets, egg and Italian style breadcrumbs.
Dip the cutlets in egg and the coat with breadcrumbs.Then all you do is fry it in olive oil (that's what I use) until they are golden brown. Easy peasy!
