No surprise the Mockrishes love party food! This is from my first cooking class in Japan in 1994. I was 34 and had no experience in the kitchen beyond the basics. We hosted annual parties for Rob’s teachers and staff. This one was always a favorite. And it is Greek too!
1 cup coarsely chopped spinach, washed and dried 1/2 cup fresh bread crumbs 1/4 cup cold water 3/4 cup plus 2 tablespoons walnuts 1/2 cup olive oil 3 garlic cloves, minced 1 teaspoon lemon juice or white wine vinegar Salt and freshly ground pepper Lemon wedges Crusty bread
1. Preheat the oven to 350 F. 2. Add the spinach to a pot of salted, boiling water. Drain after about 5 seconds. 3. Soak the bread crumbs in the cold water and squeeze well to remove any excess moisture. Discard the water. 4. Place the walnuts on a baking sheet and bake for 5-7 minutes. They should be golden in color. Chop 2 tablespoons and reserve for garnish. be careful 5. Place the spinach, bread crumbs, 3/4 cup walnuts, oil, garlic, and lemon juice in a blender or food processor. Blend to a smooth paste and season with salt and pepper. 6. Spread the puree on a plate. Sprinkle with the reserved walnuts and garnish with lemon wedges. Serve with crusty bread.
