Dumplings


Dumplings, JiaoZi in Chinese, are a must have for Chinese New Year!

A: 1 lb, ground pork/turkey 2-3 Tbsp soy sauce 2 tsp minced ginger 2 Tbsp minced green onion 1 tsp sugar 1 egg 1/4 water a pinch of Sichuan peppercorn powder

B: 8-12 leaves of napa cabbage salt Dumpling wrapper (available in the freezer section in most asian stores, take out of freezer 4 hours before to defrost)
1. Mix all ingredients under A together vigorously until the meat has a consistent texture. 2. Finely chop the napa cabbage, add 1 Tbsp salt, mix, wait for 2-5 minutes then mix again before squeezing water out. Add to the meat mixture. 3. Add 2 Tbsp oil (can split btw cooking oil and sesame oil) to the meat and napa cabbage mixture then mix until veg and meat are evenly mixed. 4. Add 2-3 tsp salt and mix. 5. Now you can start making the dumplings.
